Cheesy BBQ Beef Casserole Recipe

Ingredients
  • 1 (16-ounce) package wide egg noodles
  • 3 tablespoons butter
  • ½ cup chopped yellow onion
  • 4 garlic cloves, peeled and minced
  • 1 (12-ounce) package pulled BBQ beef or chopped beef brisket
  • ½ cup BBQ sauce
  • 1 (15-ounce) can tomato sauce
  • ½ cup heavy cream
  • 1 tablespoon beef bouillon paste
  • ½ cup water
  • 1 ½ cups grated cheddar cheese
  • 2 scallions, chopped
Directions
  1. Preheat the oven to 400 F.
  2. Fill a large pot ¾ full with water and bring to a boil over high heat.
  3. Once boiling, add the noodles, and cook according to the instructions on the package (aiming for the lower end of the time range).
  4. Meanwhile, spritz a 13x9-inch casserole dish with cooking spray and set aside.
  5. Once the noodles have cooked, drain and rinse under cold water, and set aside.
  6. Using the same pot used to cook the noodles, melt the butter over medium heat.
  7. Once melted, add the onion and garlic and saute for 3 minutes or until tender.
  8. Add the pulled beef to the pot, stir to combine, and continue cooking for 3 minutes more.
  9. Add the BBQ sauce, tomato sauce, cream, bouillon, and water to the pot.
  10. Stir to combine and bring to a simmer. Simmer for 10 minutes, stirring frequently.
  11. Remove the pot from the heat and add half of the grated cheese.
  12. Stir until the cheese has melted.
  13. Add the cooked noodles to the pot and gently stir to combine.
  14. Transfer the noodle mixture to the prepared casserole dish, spreading out in an even layer.
  15. Top the casserole with the remaining cheese and place in the oven.
  16. Bake for 10-15 minutes or until the cheese has melted and the edges of the casserole are lightly browned.
  17. Remove from the oven and garnish with chopped scallions before serving.
