Glazed Peach Muffins Recipe

Ingredients
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup white sugar
  • ¼ cup light brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • ¾ cup buttermilk
  • 3 fresh peaches, pitted and finely diced
  • 1 cup powdered sugar
  • 2 tablespoons milk
Directions
  1. Preheat the oven to 350 F.
  2. Add the flour, baking powder, baking soda, and salt to a mixing bowl and whisk to combine.
  3. In a separate bowl, whisk together the sugars, oil, eggs, vanilla, and buttermilk.
  4. Add the dry ingredients to the bowl with the wet ingredients and whisk until combined.
  5. Add the diced peaches and gently fold to combine.
  6. Transfer the muffin batter to a lined muffin baking tin.
  7. Bake for 20-25 minutes or until a skewer poked into the center of a muffin comes out clean.
  8. Leave in the pan for about 10 minutes before transferring to a wire rack to cool.
  9. Mix together the powdered sugar and milk to make the glaze.
  10. Spoon the glaze all over the tops of the cooled muffins and serve.
