Thai-Inspired Chicken Pizza Recipe

  • 12 ounces boneless, skinless chicken thighs
  • ¼ cup water
  • 1 tablespoon fish sauce
  • 1 quarter-sized slice ginger
  • 1 clove garlic, smashed
  • ½ cup natural peanut butter
  • ¼ cup water
  • 2 tablespoons red curry paste
  • 2 tablespoons sugar
  • 2 tablespoons rice vinegar
  • 2 teaspoons soy sauce
  • 1 lime, juiced
  • 2 pounds pizza dough
  • 8 ounces grated mozzarella
  • ½ cup thinly sliced mango
  • ¼ cup finely chopped scallions
  • 2 tablespoons chopped peanuts
  • 2 tablespoons finely chopped cilantro
Directions
  1. Place the chicken thighs, fish sauce, water, ginger, and garlic in a bowl.
  2. Cover with plastic and marinate at room temperature for 30 minutes.
  3. While the chicken is marinating, make the peanut sauce by combining all of the ingredients in a small saucepan over low heat.
  4. Cook the sauce for 3–4 minutes, stirring often, until it reaches a smooth consistency. Remove from the heat.
  5. Heat the grill to medium-high heat.
  6. Remove the chicken from the marinade, then grill the thighs for 3–4 minutes on each side.
  7. Remove the chicken from the grill and allow it to rest for 5 minutes.
  8. Slice the chicken into thin pieces.
  9. Preheat the oven to 450 F.
  10. Divide the dough into two even halves and stretch them out to your desired size on a baking sheet.
  11. Divide the sauce between the two doughs.
  12. Top each pizza evenly with mozzarella.
  13. Sprinkle the chicken, mango, and scallions evenly over the two pizzas.
  14. Bake the pizzas for 18–20 minutes, or until the cheese is melted and the crust is nicely browned.
  15. Remove the pizzas from the oven and rest for 4 minutes.
  16. Top the pizzas with the cilantro and peanuts, slice, and serve immediately.
